I’ll be honest, I wasn’t sure what I was getting into when I bought the gigantic bag of kiwis at the bulk-store last week. I mean, I like a good kiwi, but I’d really never eaten/consumed them in any way that wasn’t just a straight-up spoon-to-the-fruit or my Coconut-Kiwi Smoothie. But then, I had this rad idea….what if I made Mint Kiwi-Ade (AKA Mint Kiwi Lemonade for the Uninitiated)? And the results? MAG-nificent.

Ok, so this Mint Kiwi Lemonade is super-easy, but that’s not the best part. When I made it for my kids, Saturday afternoon when I normally make a big pitcher of lemonade, they were, at first, confused. It’s such a different flavor–and kind of a different look, too. But, they were brave and the LOOKS ON THEIR FACES! I really wish I’d gotten a shot. It was like my son expected a rotten apple in his mouth and got a fresh grape instead…he was so very surprised. And my daughter–well, her expressions were just silly, but she is 2. Whatever. LOL!

Now, one thing I would have done differently is I would have upped the amount of mint. I know some people don’t like a whole lotta mint in their drinks, but I could have done with more. However, I was serving this to kids, so I didn’t know exactly how much I should add…long story short, I ended-up debating a lot with myself before choosing to err on the side of caution. But, if I were making this for adults, I would have upped the mint. Significantly. Like half again or more. Heh.

I had this rad idea....what if I made Mint Kiwi-Ade (AKA Mint Kiwi Lemonade for the Uninitiated)? And the results? MAG-nificent.

Ingredients
2 large lemons
1/2 cup sugar
3 cups kiwis about 6
1 gallon water
3 sprigs fresh mint
1 kiwi for garnish

Instructions
1.Pop the lemons in the microwave for about 30 seconds.
2.Once you remove the lemons from the microwave, roll them on the counter under your elbow.
3.Both of these initial steps are to create as much lemon juice as possible.
4.Slice lemons in half and squeeze into a strainer (you don't want any seeds) before pouring into a gallon-sized pitcher.
5.Peel kiwis and place in the food processor or blender (I have a blender but no food processor, so there's that) for about 1 minute until completely mashed, smashed and otherwise obliterated.
6.Put kiwi pulp into lemon juice.
7.Add water and sugar.
8.Stir until sugar is completely dissolved.
9.Mash mint sprigs and stir into the lemonade, to taste.
10.Slice remaining kiwi in thin slices and drop into the drink.
11.Serve to those parched, thirsty guests of yours! LOL

Watermelon Mojito Recipe

Refreshing, healthy and non-alcoholic drink to enjoy hot days. Can easily turned into alcoholic drink if you want to

Ingredients
1 cup watermelon pieces (1/2 to 1" size)
5-6 leaves fresh mint
1 tbsp fresh lime juice
3/4 cup chilled sparkling apple cider (naturally sweetened)
4-5 ice cubes
1 tsp agave (optional to adjust sweetness if necessary)
2-3 slices lime (optional for garnish)

Instructions
1.In a small bowl or jar add watermelon pieces. Muddle to extract juice from the watermelon pieces. Then add fresh mint leaves and again muddle for few seconds to slightly bruise the mint leaves.
2.Transfer the watermelon mint muddled mixture into a serving glass.
3.Add ice-cubes followed by lime juice and chilled sparkling apple cider. Give it a gentle mix and adjust sweetness if necessary.
4.Garnish with mint springs and lime slices and serve to enjoy a glass of fresh watermelon mint mojito.

Recipe Notes
1.Replace sparkling apple cider with rum if you want to enjoy an alcoholic version
2.Try to consume on the same day to enjoy its fresh flavors.

I’ve lightened up the classic mimosa recipe by using Sweet’N Low® as a zero calorie sweetener.  I used unsweetened fresh fruit instead of pre-made juice and sweetened it with Sweet’N Low and honey. The fresh fruit cream is full of flavor and creaminess that pairs perfectly with champagne.  Mimosas are the classic brunch beverages to serve and this drink is both delicious and adorable.

To make this recipe, start with fresh or frozen strawberries and raspberries.  Heat them up on the stove top to get them nice a soupy.  Sweeten it with Sweet’N Low and a little honey to give it a nice flavor without all the extra calories.  Blend it up in a blender and press it through a fine mesh strainer to separate the juice from seeds and skin.

Pour in half and half cream, stir and pour in ice cube trays or a freezer safe dish.  I like to use an ice cube tray and allow it to come to room temperature for about 5-10 minutes to easily remove the cubes.  Place liquid mixture in the freezer for at least for hours of store until ready to use.  Pour champagne half way up glass and add strawberry cream cubes.

Strawberry Cream Mimosa

Ingredients
12 ounces frozen raspberries
1/2 cup fresh or frozen strawberries
6-7 packets Sweet'N Low *
1 teaspoon honey
1 cup half & half cream
1/8 teaspoon pure vanilla extract
1-2 bottle sparkling champagne (see notes for alternatives)

Instructions
1.In a medium sauce pan set on low/medium heat, pour raspberries and diced or frozen strawberries in pot. Allow berries to get soft and soupy, about 10 minutes. Pour in 6-7 Sweet'N Low packets to sweeten berries. Be sure to taste berries after 4 packets because some berries are sweeter than others, then adjust sweetness to desired taste. Using a spatula, stir Sweet'N Low well then add honey. Stir mixture and continue to heat for another 5 minutes. Take off heat and allow to sit for a few minutes. Puree or blend mixture in a blender well. Place fine mesh strainer/colander over measuring cup and pour liquid through. Tap strainer on cup to push liquid through, working in batches. Move seeds to small bowl and continue to use strainer to separate the remaining liquid from the seeds.
2.Once complete, run a little of the half & half cream through the strainer with the seeds to remove any additional liquid; I got an additional 1/4 cup raspberry liquid doing this. Pour remainder of cream into raspberry liquid and stir to combine. Add a splash of vanilla extract and stir. Pour into an ice cube try and freeze or pour into plastic bowl and freeze for at least 4 hours.
3.When ready to serve, pour champagne into glass and add cubes.

I don’t know about your part of the world… but it is HOT here in SoCal.

Spring has already passed us by and we are well into summer. It’s steamy during the day, but once the sun goes down, it’s pleasantly cool.

I love to kick back on the patio and enjoy a glass of this sweet and fruity Berry-licious Iced Tea Red Sangria, my new favorite summer drink.

I’m a life-long, die-hard iced tea lover.

Gallons of sun-made iced tea fill my childhood memories. In my early 20’s, I loved sipping cocktails made with iced tea. These days, I’m craving my favorite drink, sangria, made with iced tea too.

Making a version of sangria based on iced tea was part destiny. Part destiny, part super berry-liciousness. I love how easy this recipe is too. Simply combine iced tea, sweet red wine, and berry juice. Chill it in the refrigerator to blend the flavors, then pour over lots of fresh berries and serve. It’s sweet, delicious, fruity, and refreshing.

Summer in a glass? Definitely.



Iced Tea Berry Sangria

Your new favorite sangria is made with iced tea! Berry-licious Iced Tea Red Sangria is an easy cocktail made with tea, sweet red wine, and fresh berries.

Ingredients
2 quarts Sweetened iced tea chilled
1 (750 mL) bottle Red Moscato or other sweet red wine, chilled
2 cups berry juice chilled
1/2 cup brandy
2 lbs strawberries (hulled and sliced), blackberries, blueberries, and raspberries


Instructions

In a large pitcher, combine tea, wine, juice, and brandy. Chill at least 30 minutes or overnight.

To serve, add fruit to pitcher or divide among glasses. Pour sangria over the fruit. The sangria may be served over ice if desired.

I have a confession to make: I am absolutely obsessed with turmeric. I’ve been sneaking it into anything and everything, including these Mango Margaritas.

It all started with me trying these awesome Orange Turmeric Margaritas from Vintage Kitty. We had game night at our house and I decided to make them (along with Fire Roasted Tomato Soup and Cheesy Tomato Soup Pull Apart Bread). They were an absolute hit and I got hooked on the turmeric simple syrup.

When I was trying to think of spring inspired food and drink recipes, mangos popped into my mind. They have been really good lately and I thought I could expand on my orange and turmeric obsession.

I made concentrated turmeric simple syrup to emphasize the flavor even more and it goes great with squeezed orange and lime juice as well as the mango. I usually prefer margaritas on the rocks rather than frozen, but using frozen mangos reduces the iced water consistency that I dislike with a silky smooth one that I love.

These Mango Margaritas also fit into my picnic theme because you can pour them into small mason jars for individual servings and freeze them. When you go on your picnic, within 10 to 15 minutes they are the same consistency they were when you first blended them.

My second obsession has been Tajin Seasoning. Sprinkling this stuff on popcorn, fruit, and into drinks is my new favorite thing. And covering the rims of the glasses with it and sprinkling it on skewered mangos takes these Mango Margaritas to another level of awesome.

MANGO MARGARITAS

I could have had one huge Chevy sized margarita, but I was well behaved and separated it out into three smaller serving sizes. But I was very sad. Bottoms up!

Mango Margaritas with a Turmeric Chili Twist

These Mango Margaritas spice things up a bit with a delicious turmeric simple syrup and a sprinkling of Tajin chili seasoning. They can also be frozen and taken to-go on picnics.

Ingredients

Mango Margaritas
2 cups frozen mango
1/2 cup tequila
1/2 cup fresh lime juice
1/4 cup fresh orange juice

Tajin Seasoning
3 tablespoons turmeric simple syrup

Turmeric Simple Syrup
1 cup peeled and diced turmeric root
1 cup sugar
1 cup water

Instructions

Turmeric Simple Syrup
1.Combine turmeric, sugar, and water in a sauce pan and bring to a boil on high heat. Reduce to low-medium and cook for 1 hour. Strain out the turmeric and store in an airtight container in the fridge.

Mango Margaritas with a Turmeric Chili Twist
1.Take a lime wedge and wet the edges of your glasses. Drag the rims in Tajin seasoning and put in the freezer.
2.Cut fresh mango into bite sized pieces and put them on skewers. Sprinkle Tajin seasoning on them and set aside.
3.Combine all the ingredients in a blender and blend on high until smooth. Frozen mango is difficult because sometimes it seems like it's smooth but there will be hidden chunks in there.
4.Pour into the glasses, sprinkle some Tajin seasoning on the surface, and place the seasoned fresh mango skewers across the glass. Serve immediately.
5.Or if you are taking the margaritas on a picnic, pour them in individual small mason jars and freeze. In 10 to 15 minutes the margaritas will be the consistency they were when first blended.

It's early April, but my thoughts are already turning to Cinco de Mayo and all the warm-weather summer days that follow soon after.  Aside from gin & tonics {especially cucumber gin & tonic}, one of my favorite warm-weather sippers is a tall, refreshing mojito.

A delicious traditional Cuban cocktail, mojitos are a simple mix of just five basic ingredients ~ mint, fresh lime juice, sugar, white rum, and club soda.

Perhaps it's the simplicity of the drink that makes me love it so much!  Or perhaps it's the totally refreshing combination of fresh mint and lime juice.  But whatever it is, love them I do. 

And guess what?  Basic mojitos aren't just fabulous themselves ... they also provide a marvelous canvas for adding in other flavors, too.  Like a Watermelon Mojito.  Or like with this totally amazing Coconut Mojito.

To mix up a Coconut Mojito, all you do is follow the basic mojito preparation ... but add in a touch of cream of coconut.  You know, this stuff ...

... the stuff found in the drink mixers section of the grocery store, not coconut milk.  

Sometimes cream of coconut can be found in the squeeze bottle I've pictured above, and sometimes it's found in a can.  Either way, just be sure you grab one that's cream  of coconut ... like what's used to make pina coladas ... not regular coconut milk.

I love how easy it is to mix up a mojito!  A plain mojito, a Watermelon Mojito, or  a Coconut Mojito!  Here's all you do ...

Muddling releases the oils from the mint leaves into the glass, making for one super refreshing cocktail.

For a Coconut Mojito, place fresh mint leaves, a teaspoon or two of granulated sugar, the juice of one lime, and an ounce of cream of coconut into a tall, sturdy highball glass.  

With the back of a spoon or a cocktail muddler {but seriously, how many of us own a muddler??}, press and gently twist the mint leaves against the side of the glass ... this is what's called 'muddling.'

Muddling releases the oils from the mint leaves into the glass, and hence the drink, making for one super refreshing cocktail!  Muddle the mint until it's bruised and fragrant, but not torn to shreds.  Tearing the mint too much can create a bitter tasting drink.

Once the muddling's done, add in an ounce {or a heavy ounce, if you'd like a stiffer drink} of light rum ...

... Then top the glass off with ice and club soda ... garnish with lime wedges, mint, and a sprinkling of sweetened coconut if you'd like ...

And that's it! 

With just those few simple steps, we can all be enjoying a totally delicious, completely refreshing, fabulously thirst-quenching Coconut Mojito.

And hmmmmm ... I don't know about you ... but I'm not so sure I'm going to wait until Cinco de Mayo or warmer weather to enjoy one.

Coconut Mojito
(Printable recipe)

Ingredients

8 fresh mint leaves
1 lime, juiced
1 to 2 tsp. granulated sugar
1 oz. cream of coconut*
3 oz. light rum
club soda or sparkling water
lime wedges, mint, and sweetened flaked coconut for garnish, if desired

Directions

1.Place mint leaves, granulated sugar (I find the coconut mojito plenty sweet enough with just 1 teaspoon sugar), lime juice, and cream of coconut in a tall sturdy highball glass. For better dissolving, use superfine sugar if you'd like. With a cocktail muddler or the back of a sturdy spoon, press and gently twist the mint leaves against the side of the glass. Stop muddling when the mint is bruised and fragrant, but not yet torn, as tearing the mint too much can create a bitter taste.
2.Add 3 ounces white rum. Fill the glass 3/4 full with ice cubes or crushed ice. Fill the remainder of the glass with sparkling water or club soda. Stir thoroughly.
3.Garnish with lime wedges, mint, and a sprinkling of coconut if desired, serve, and enjoy!
* The stuff you find in the drink mixers section of the grocery store, not coconut milk.

Try this Sparkling Pineapple Strawberry Punch for your next party! Sweet pineapple juice is paired with bubbly ginger ale, fresh fruit and mint for a refreshing non alcoholic punch!

Spring is in full swing at the farm! We have enjoyed our windows being wide open, the longer days and of course we’ve already broken out the grill! Over the weekend we did a little gardening, and by little I do mean little. I kind of weeded and swept of the porch, ha! That counts, right?

I am also ready for the other things Spring brings – get togethers! Brunches, parties, picnics and BBQ’s are some of the best parts of Spring and Summer! This Sparkling Pineapple Strawberry Punch is perfect for any event, it is easy enough you can do it for an afternoon get together but it looks elegant enough it is great for bridal or baby showers!

Here is how we do it! We start by dicing up fresh pineapple and strawberries and adding them to an ice tray, we are going to make some nice fruit ice cubes so your punch doesn’t get watered down as it sits. Then we add a lot of fresh fruit to a nice big pitcher, pour our punch mixture over the fruit and fancy ice cubes and add in a few mint leaves! This is super easy but it always impresses!

SPARKLING PINEAPPLE STRAWBERRY PUNCH

Ingredients

1 (48 ounce) can pineapple juice
1 (2 liter) container of ginger ale
4 cups pineapple, chopped
3 cups strawberries, chopped
1/8 cup fresh mint leaves

Instructions

1.Directions for the Fresh Pineapple Ice Cubes
2.Add 1 cup chopped pineapple chunks to a standard ice cub tray, add mint leaves if desired. Pour 1 cup pineapple juice over the fruit and freeze overnight.
3.For the Pineapple Strawberry Punch
4.Add the fruit, mint, and pineapple ice cubes to the bottom of a pitcher or punch bowl. Pour the remaining pineapple juice and half of the ginger ale in the pitcher and stir.
5.Add additional ginger ale as the Pineapple Ice Cubes begin to melt.

On Friday, I hosted my last segment on CW6 San Diego. Unfortunately the station closed after over 60 years on the air. For the last four years, I’ve hosted dozens and dozens of segments on CW6 and loved every one of them!

Hosting a segment on their last day on air meant the world to me and I couldn’t think of a better way to send them off than with a deliciously refreshing Mango Margarita!

Over the years, we’ve drank mimosas, Moscow mules and martinis together on the show, so I only found it fitting that our last segment together would include a cocktail!

The idea for this drink actually came from my favorite smoothie recipe. Of course, one minute you’re being all healthy drinking a smoothie, the next you’re dreaming up boozy cocktail recipes! 😉

For me, I always love the idea of a frozen cocktail, but once I order one, I’m over it immediately because it’s like whoa sweetness!

I love this frozen mango margarita recipe because it’s made with just real fruit and booze, with the option of adding agave syrup or honey for a little sweetness. No mixers or heavy syrups needed to whip up this refreshing cocktail!

Frozen Mango Margarita

Total Time: 5 minutes

Yield     : 2 (10 oz) margaritas

Ingredients

10 oz bag frozen diced mango
½ cup tequila
¼ cup orange liqueur
½ cup orange juice
¼ cup lime juice
2 cups ice cubes
2 tbsp agave syrup or honey (optional sweetener)

Instructions

1.Add all ingredients to a blender and puree until smooth.

Hey guys! Happy Monday! How was your weekend? It felt too short for me! I’m not happy with losing an hour but this way I’ll have more daylight to take my blog photos. Did I say “mojito”? Oh, yeah, I first thought to make margaritas with the blood oranges I got, but I couldn’t help myself and made these mojitos. You know mojito is my favorite cocktail. So I created another flovor – Blood Orange And Raspberry Mojito.

I’m pretty sure that most of my non-US readers are aware that March 8th was International Woman’s Day. I had a fun get together with some of my girlfriends and made these blood orange and raspberry mojitos for them. They were thrilled!

Here in the US we celebrate Mother’s Day instead. You can still make this drink for Mother’s Day, if you are lucky to find some blood oranges.

Luckily they are still in season and I just can’t get enough of them. They are my favorite citrus and then is grapefruit! I love San Pellegrino’s Blood Orange Soda, but we don’t buy sweet sodas very often around here. We prefer fresh juice.

In this cocktail, I used fresh squeezed blood orange juice, juice from mashed raspberries, some simple syrup, rum and sparkling water (soda water). Very quick and easy to make, festive and refreshing.

5 mint leaves
2 oz rum
2 oz simple syrup
juice from 1 blood orange
juice from 1/2 lime
juice from 1/4 cup fresh raspberries (mash raspberries and strain to remove the seeds)
sparkling water

Instructions
1.In a tall glass place mint leaves and rum. Muddle for a minute, but don't break leaves. Remove or leave the mint leaves in the glass.
2.Add ice to fill the glass.
3.Add simple syrup, blood orange juice, lime juice and raspberry juice. Stir.
4.Top with sparkling water.

This easy berry margaritas recipe uses fresh blackberries, strawberries, and blueberries for a sweet, colorful twist on a refreshing tequila cocktail. No margarita mix required! Vegetarian, Vegan.

Let’s talk about tequila!

We’re finally having a bit of gorgeous, sunshine-y weather here, which means we can finally (FINALLY!) sit outside on our little porch and have a drink in the sunshine.

Also, fresh berries are starting to roll in at the grocery store and farmer’s market, which means my fridge has been stocked with all the best strawberries and blackberries and blueberries New York has to offer.

ALSO also, I bought some tequila last week.

Sooooo tequila + fresh berries + FINALLY SOME SUNSHINE?

Pretty sure these triple berry margaritas = DESTINY.

The homemade berry simple syrup in this recipe is easily customized depending on what berries are in season, and it gives these margaritas a stunning neon pink color. I used strawberries, blackberries, and blueberries, but it would also be great with raspberries or any local berries you have around!

Fresh berries are always my favorite, but frozen berries work well too if you’re making these margaritas in a non-berry season (which, ummm, they’re delicious, so we should probably ALL be making them year-round).

And ok, confession time: I’m not usually one to go for the fruity pink drinks.

I don’t like overly sweet cocktails, and usually when I’m out places pink drink = SUGAR OVERLOAD, so I tend to steer clear.

But these cocktails have TEQUILA.

So I made an exception.

(Also, I did a lotttttt of taste testing to make sure they’re balanced and fruity but not overly sweet. And then I did some more taste testing. Because yum).

TRIPLE BERRY MARGARITAS

INGREDIENTS

FOR THE TRIPLE BERRY SYRUP:
1 cup water
3/4 cup sugar
1/3 cup blackberries
1/3 cup sliced strawberries
1/3 cup blueberries

FOR THE COCKTAILS:
1/4 cup sugar or salt (for glass rims)
2 cups ice (you can eyeball this)
1/2 cup triple berry simple syrup
1/2 cup fresh lime juice
1 cup tequila
Optional Garnishes: Lime slices, fresh berries

INSTRUCTIONS

FOR THE TRIPLE BERRY SYRUP:
1.Combine all ingredients in a medium saucepan over medium heat. Bring mixture to a simmer and cook 4-5 minutes until berries have softened and sugar has dissolved.
2.Remove syrup from heat and let it cool completely.
3.Strain the simple syrup to remove the berry pieces and set strained simple syrup aside for the margaritas. (I like to save the cooked-down berries for smoothies later in the week!)

FOR THE COCKTAILS:
1.Lay two plates down on the counter. Add just enough water to the first plate to cover its surface. Add your sugar or salt (I like sugar on my cocktail glasses!) to the second plate and spread it out evenly. Grab four cocktail glasses and dip the rim of each glass lightly into the shallow water on the first plate, and then into the sugar or salt on the second plate. Shake off the excess, fill each glass with 1/4 cup or so of ice, and set aside.
2.Combine triple berry simple syrup, lime juice, and tequila in a cocktail shaker. (Depending on the size of your shaker, you may need to do this in two batches). Add a handful of ice and shake well until margaritas are chilled.
3.Divide margaritas evenly between your four cocktail glasses.
4.Garnish margaritas with extra lime slices and fresh berries (optional) and serve immediately.

NOTES
I love using fresh berries for this recipe when they’re in season, but you can make the simple syrup with frozen berries as well.

Use whichever berry varieties you like in this recipe. It would also be great with raspberries!

You can use either salt or sugar on the rim of your cocktail glasses. I like sugar!

To make this as a blended margarita, blend margarita ingredients in a powerful blender with approximately 2 cups of ice.

This recipe makes a bit of extra simple syrup – keep the extra syrup in the fridge for up to a week and use it in other cocktail recipes, fresh lemonade, or your morning smoothie!

The sweetness of this margarita will vary depending on the berries and limes that you use – give the mixture a taste before you pour it into glasses and add more lime juice or simple syrup if you’d like to adjust the sweetness!

If you want to stretch this margarita recipe a bit farther, top off each drink with a splash of tonic water.

We’re all so busy at this time of year, we forget to take care of ourselves sometimes, don’t we?

With lots of indoor activities, and children passing around germs, it’s easy to catch whatever’s going around. We have to remember to take care of ourselves, or we wind up run down and sick.

A healthy smoothie is a great choice for breakfast on busy days. Throw everything in the blender, give it a whirl, and you’re good to go. You don’t need a Vitamix to make a super smoothie – this blender is SO powerful, and a fraction of the price. Plus, you can add on this blend and go smoothie jar, which is really convenient. This one is full of antioxidants and vitamin C from all the berries and fresh kiwi. Did you know that one kiwi has over 100% of the recommended daily value of vitamin C? And it has a rare form of vitamin E that’s fat-free.

The three types of berries are also excellent for immunity as well since they are full of vitamin C and bioflavonoids. Eating a variety of berries is very good for you as you get a variety of antioxidants. The darker the berries, the more antioxidants they contain. You could also add some blackberries to this smoothie if you want.

I used orange juice for added vitamin C and calcium, but you could use water or even cranberry juice if you prefer.



Tips for making this triple berry smoothie:
If you find that your frozen berries or the kiwi are too tart, you can add a little maple syrup or honey to sweeten this if needed, or any sweetener that works for your diet.
Occasionally frozen strawberries are on the tart side – so if fresh fruit is in season, you can use that instead if you prefer!
If you wanted to add more antioxidants and iron, you could even throw some fresh kale or spinach in here. It shouldn’t change the flavor, but it will change the color – it won’t be such a vibrant shade of deep pink.
You can also add chia seeds, flax seed meal, or hemp seed hearts (affiliate links) if you are interested in adding some protein and healthy fats to this smoothie. I didn’t choose to do that this time, but it’s a great option if you want this to have more staying power between meals.
This is a beautiful smoothie to enjoy whether you’re sick or well. It’s the perfect breakfast or snack.

Strawberry Margarita PUNCH!


Ingredients

12 oz fresh strawberries, hulls removed (can also use frozen)
2 cups strawberry soda
1 1/4 cups tequila, can use more
1 can frozen limeade concentrate
4 cups water, divided.(can also use sparkling water instead of you want more fizz)
2 cups orange juice (NO pulp)
1/2 cup cointreu or triple sec
Sanding sugar
simple syrup
Ice
Strawberry for garnish
Lime wheels


Instructions


Use 2 appetizer plates, on one of the plates pour 1 tbsp of simple syrup. On the other one add the sanding sugar.
Dip the rim of your glasses in the simple syrup and then in the sanding sugar and set to the side
In a bar shaker add the liquors ONLY & shake to combine add to a large punch bowl or pitcher
In a blender or processor, add 1 cup of water + strawberries until smooth.
Add in the frozen limeade & Orange juice, mix until combined
Pour into the punch bowl/ pitcher and mix until incorporated
Add in strawberry soda & remaining water, mix once more
Garnish with sliced limes
ENJOY!

Let’s talk about food envy.

You ever get it?

If you do, it’s the WORST. I am no stranger to it as I try to balance eating a healthy dinner when I venture out, to indulging a bit. It’s the best of both worlds when they collide and there is no envy in site.

But for those times when you clearly make the wrong decision and your mouth instantly starts to water at the site of those nachos next to you.

Yup. You guessed it. I had some major food envy this weekend.

On Saturday, we went to the Royals baseball game for a friends 30th birthday. If you are anywhere in the midwest, or America for that matter, I am sure you are experiencing the extreme, unbearable heatwave that Mother Nature is gracing us with. Not only is KC looking at temps in the high 90’s, we have nearly 100% humidity. Read that as instant puff ball of hair, clammy skin and clothes that are no longer dry the moment you step outside. And let’s just throw out being pregnant is not a plus. You know, for good measure.

I love going to the ball park, Stadium Cap Nachos…I am looking at you! And I can never turn down one of those Electric Lemonades served in a tall cup. Makes me feel like I am on a tropical vacation, just can’t see the beach.

Well yesterday, I saw plenty of both of those. And let’s just say, I was envious. Super envious. Especially that electric lemonade that I had to pass on. Believe it would have been shunned upon for a preggo sipping on one of those…

But my envy didn’t last one when I remembered this lemonade sitting at home. A refreshing drink was needed after sitting in that heat!

We all know my love of fruity drinks. They are necessary to spice things up beyond a glass of ice water. And not to mention easy to make. I love whipping up a pitcher of this to sip on all week long or before a summer party. No one will miss the booze!

Or if you are feeling it, add a splash of vodka in there. I won’t tell…

Fruity and mint are perfect together. I pureed fresh pineapple but if you want a shortcut or pineapple isn’t in season, simply use pineapple juice. It’s tasty both ways. Add some prepared lemonade, a few mint leaves, and you are ready to go!

SKINNY SPARKLING MINT PINEAPPLE LEMONADE

Skinny Sparkling Mint Pineapple Lemonade is light, refreshing and filled with fruity flavors!

Ingredients

2 cups fresh pineapple juice or a fresh pineapple, diced
2 cups light lemonade, such as Crystal Light
2 cups lime sparkling water, such as La Croix
For Garnish:
Lime wedges
Mint leaves

Instructions

1.If using a fresh pineapple, add the pineapple to a blender and puree well.
2.Measure out 2 cups.
3.In a pitcher, combine the pineapple juice and light lemonade. Stir to mix well. Add sparkling water and gently stir.
4.In 4 medium glasses filled with ice, add the pineapple lemonade.
5.Garnish with lime wedges and mint leaves.

Easy Iced Mocha Mint Frappe is a refreshing treat to enjoy this summer!

Last few days of summer remaining and all I crave these days is refreshing drinks. Of course being an Indian, I grew up having chai but I could never understand how people would drink chai @ 115 F in Delhi during summers! Now don’t ask me why and how because I clearly don’t get it. It was a everyday thing, I would come back from college, it would be super hot and humid (sometimes there won’t be any electricity either!) and I would see my mom, dad, grandmother and everyone else enjoy their evening cup of chai. Seriously to see them drink chai in that weather always made me more restless! I need my chai in the morning and I absolutely can’t do without it but as it gets hotter in the day, I just cannot even think of gulping down a hot drink. These days, my favorite way to cool off during the day is International Delight Iced Coffee.

Actually I enjoy iced coffee throughout the year but more so during summers. But as much as I love it, I don’t always have the time to go a coffeehouse to grab one. Especially when you work from home all day, you really don’t feel like going out. Which is where International Delight Iced Coffee makes things so much more convenient and affordable. When you have ready to drink iced coffee at home, then all you need to do is pour it over ice and and enjoy and that too in the comforts of your own home!

While iced coffee is great on it’s own, you can make it even more special by adding it to recipes, like in this Iced Mocha Mint Frappe. It comes together so quickly and tastes amazing! To make this frappe, you literally need 10 minutes. All you need to do is blend together International Delight Iced Coffee – Mocha, your favorite chocolate ice cream, mint extract and some ice cubes. Pour into glasses and enjoy, of course some whipped cream on top is mandatory! Here’s the thing though, the mint flavor can real overpower the entire drink if you add too much of the mint/peppermint essence. I thought 1/4 teaspoon was good enough but you can always adjust to taste.

I hope you guys enjoy this mocha mint frappe as much as I did!

Method

To a blender add  International Delight Iced Coffee – Mocha and then add scoops of your favorite chocolate ice cream.

Add in the mint extract.

And some ice cubes and blend away till completely smooth. Set aside.

Add cold heavy cream to the steel bowl of your stand mixer [or use your hand mixer]. Start beating the cream using the wire whisk attachment.

Add granulated sugar and mix.

Beat the cream till it forms peaks.

Pour the mocha mint frappe into glasses and top with homemade whipped cream. Garnish with fresh mint leaves and enjoy!

I found International Delight Iced Coffee in the refrigerated tea/juice section at my local Walmart. So make sure to check out the refrigerated section at your next Walmart visit and grab some of this iced coffee!

2-3 scoops chocolate ice cream
few ice cubes
1/4 teaspoon mint extract

Whipped Cream
3/4 cup heavy cream
1 tablespoon granulated white sugar

Mint Leaves, To Garnish

Chocolate Syrup, Optional, To Garnish

Instructions

1.To a blender add International Delight Iced Coffee - Mocha and then add scoops of your favorite chocolate ice cream.
2.Add in the mint extract and some ice cubes and blend away till completely smooth. Set aside.
