For this non-alcoholic drink, I combined this muddled watermelon with lime juice and sparkling apple cider. However, you can use rum if you want to make it a traditional alcoholic mojito drink

Ingredients
1 cup watermelon pieces (1/2 to 1" size)
5-6 leaves fresh mint
1 tbsp fresh lime juice
3/4 cup chilled sparkling apple cider (naturally sweetened)
4-5 ice cubes
1 tsp agave (optional to adjust sweetness if necessary)
2-3 slices lime (optional for garnish)
Instructions
1.In a small bowl or jar add watermelon pieces. Muddle to extract juice from the watermelon pieces. Then add fresh mint leaves and again muddle for few seconds to slightly bruise the mint leaves.
2.Transfer the watermelon mint muddled mixture into a serving glass.
3.Add ice-cubes followed by lime juice and chilled sparkling apple cider. Give it a gentle mix and adjust sweetness if necessary.
4.Garnish with mint springs and lime slices and serve to enjoy a glass of fresh watermelon mint mojito.
Recipe Notes
1.Replace sparkling apple cider with rum if you want to enjoy an alcoholic version
2.Try to consume on the same day to enjoy its fresh flavors.
3.You can also use grape juice instead of apple cider
